The head chef at Fantasy Springs Casino and other desert-area chefs will demonstrate how to use dates in cooking at the Riverside County Fair and National Date Festival.
Chefs must use dates in all the dishes during the demonstrations, which will be led by fantasy Springs chef Freddy Rieger at 1:30 p.m. each day of the festival and are free with admission, Fantasy Springs spokeswoman Anndee Laskoe said.
The demonstrations are expected to draw thousands of people, she said.
Friday is opening day for the festival, and admission is free from 10 a.m. until 3 p.m.
On Canada Day, Feb. 19, Canadians with proof of residency get in free, and on Kids’ Day, Feb. 20, one child will be admitted free with each paid adult.
The fair runs through Feb. 24 at 82-503 Highway 111 in Indio.
Fair hours are 10 a.m. to 10 p.m. General admission is $9 for adults, $8 for seniors, $7 for youths and $6 for those on group bus tours.
Children 5 and under are free.
