Pechanga chefs take charge of culinary team

Two new award-winning chefs are at the helm of Pechanga’s culinary team.

Chef Kwok Kuen “Raymond” Tse has been named head chef of Asian cuisine and Chef Jason McClain is the new assistant executive chef.
According to a news release, the pair will work closely with each other to make some changes to menus throughout the resort located just south of Temecula adjacent to Interstate 15.
“We are looking to make some big changes to the culinary offerings at Pechanga,“ said Dennis Khanh, vice president of food and beverage, in a written statement. “Our focus will be on offering the casino guests what they want to see. We have listened to their suggestions and are crafting menus to match their tastes.”
Using elements from Japan, Singapore, Malaysia, Australia and, of course, Mainland China, Chef Raymond is expected to infuse Pechanga’s Asian dining options with new flavors and creations. He has more than 35 years of experience in the Asian culinary industry and joins Pechanga from Foxwoods Resort Casino, where he was the executive chef responsible for all the Asian restaurants. Before that, he was one of the celebrity chefs in Las Vegas, working with The Mirage Hotel and Casino, Mandalay Bay Resort and Casino and the Wynn Las Vegas.
Chef Raymond won the 2008 Gold Medal for International Master Chef for Chinese Cuisine.
Assistant Executive Chef Jason McClain has already overseen significant changes to the Kelsey’s menu at Pechanga, bringing it more in line with a sports bar. He is now working on improving the menus of The Great Oak Steakhouse, Seafood Grotto and Paisano’s, as well as polishing the Pechanga Buffet menu.

Throughout his career, Chef McClain has won numerous awards, including making the Top 10 Chefs in Florida from Food & Wine Magazine.
